Frymaster's High-Tech Protector Fryer Sets New Standard For Smart Frying

October 9th, 2007

SHREVEPORT, La. – High technology meets comfort food in Frymaster, LLC’s new Protector™ fryer.

Frymaster’s newest fryer offers several proprietary SMART4U™ high-tech features that are setting a new standard for “smart” frying, and in the process confers benefits ranging from energy conservation to oil savings to enhanced worker safety:

• The innovative Oil Attendant™ automatically monitors oil levels and replenishes the frypot oil as needed, eliminating the need for crews to manually top off oil levels. Oil is replenished from a Jug-in-Box (JIB) that is stored right in the fryer cabinet. It even alerts workers when the JIB needs replacing with a flashing orange light on the front of the fryer.
• The Protector’s onboard computer counts the frypot’s cooks. It then alerts workers with “FilterNow” and “Yes/No” messages when it’s time to filter. Frymaster’s renowned, patented FootPrint PRO® filtration system is fast and easy, encouraging frequent filtering. It quickly removes the frying byproducts that take a toll on food quality and oil life.
• The Protector’s patented electric heating elements and solid state controls ensure precise transfer of heat to the oil, without accelerating oil breakdown. The swing-up elements also allow full access to the frypot for easy cleaning, which contributes to maximizing oil life.

“The Protector harnesses technology and ease of operation to take the guesswork out of oil management, which maximizes oil life and ensures foods meet customers’ high quality standards,” said Brenda Fried Humphreys, vice president of marketing for Frymaster, an Enodis plc company.

These high-tech features generate measurable cost savings as well as environmental benefits, notes Humphreys. Frymaster estimates that the Protector’s same production capacity but smaller frypot and high-tech features that maximize oil life can generate annual oil savings over 50% compared to manual fill 50 lb fryers., making it a must-have for any green-minded – or bottom-line watching – operator. The Protector’s impact on oil savings and longer oil life was documented in research by ESCA Enterprises Inc., Glen Mills, Pa. In addition, the Protector earned a federal ENERGY STAR® rating of over 85 percent, exceeding federal standards for energy efficiency.

These technology-generated savings can help operators transition to healthier, yet highercost, trans fat-free oils, said Humphreys.

“The Protector’s high-tech features can in fact help the foodservice industry by allowing operators to meet customer demands for great-tasting, healthier fried foods,” Humphreys said  Frymaster, an Enodis company, is the world’s leading manufacturer of commercial fryers for the foodservice industry. For more than 70 years, the company has manufactured superior quality fryers that leverage forward-thinking manufacturing, design innovation and unmatched quality control backed by the STAR Service program.
