40 Percent Oil Savings Can Ease Transition to Healthier Trans Fat-Free Oils
SHREVEPORT, La. –Frymaster, LLC’s ultra high-performance Protector® Series fryers offer substantial oil and energy savings that translate into both a healthier bottom line and healthier prepared foods for foodservice operators – and now it offers the flexibility of a gas model, too.
First unveiled in an electric model last year, the award-winning Protector’s smaller 30-pound frypot has the same food production capability and quality as a fryer almost twice its capacity, The Protector’s smaller frypot generates a 40 percent savings each time the frypot’s oil is changed, when compared to current 50-pound fryers. In addition, its high-technology features maximize oil life, as proven in independent research. The Protector’s smaller frypot and longer oil life can generate over 50 percent annual savings in oil costs, according to research by ESCA Associates Inc. of Glen Mills, Pa. The Protector also uses less energy to operate, earning it federal ENERGY STAR® ratings at or near the top of its class: a rating of 85.6 percent for the electric fryer, and 56.4 percent for the gas model.
Those cost savings can in turn help operators transition to healthier, but higher-cost, trans fat-free oils.

The Protector features several proprietary Frymaster SMART4U® technologies that protect oil quality and maximize oil life to up to four weeks, while reducing labor needs:
- The revolutionary Oil Attendant™ automatically monitors frypot oil levels, and replenishes oil as needed from a Jug-in-Box (JIB) conveniently located inside the fryer cabinet. This automated feature minimizes the labor time involved with handling oil by eliminating the need to periodically retrieve bulky oil containers from storage to manually top off or refill the frypot, thereby reducing labor costs and promoting worker safety. The Oil Attendant also automatically monitors the JIB’s oil level; a flashing, front-mounted orange light alerts workers to replace the in-cabinet oil supply when its level gets low. By removing the guesswork in maintaining oil levels, the Protector also maximizes oil life.
- Frymaster’s renowned, patented FootPrint PRO® built-in filtration system preserves and extends oil life, and ensures food quality by making regular oil filtration and daily cleaning of the frypot easy for workers. The Protector’s computer counts the number of cooks, which can be customized to the operation, and displays “Filter Now” and “Yes/No” messages that prompt workers to start the filter cycle now or after one more cook.
- The Protector’s open-pot design also allows full access to the frypot for easy cleaning, which contributes to maximizing oil life.
