SHREVEPORT, La. –Frymaster, LLC has extended its ultra-high performance Protector ® commercial fryer line, now offering the Protector’s oil, energy and labor savings in a gas model.
First unveiled in an electric model in September 2007, Frymaster’s award-winning Protector fryer takes high-tech “smart” frying to the next level with innovative oil- and energy-saving features. The 30-pound capacity Protector uses 40 percent less oil, yet delivers as much great-tasting food as a frypot nearly twice its size – all while posting an industry-leading energy efficiency ratings that exceed federal ENERGY STAR® standards.
The Protectors Series Fryers high-technology features can also maximize the fryer’s oil life, to up to four weeks – a considerable increase over yesterday’s fryers. It features Frymaster’s SMART4U® technology, designed to protect oil quality and extend oil life. The Oil AttendantTM automatically monitors frypot oil levels and replenishes oil as needed, and alerts operators when the replenishment oil container needs changing. Meanwhile, Frymaster’s renowned, patented FootPrint PRO® built-in filtration system preserves oil life and ensures the quality of fried foods, putting filtration where it’s most convenient to use – right within the Protector fryer battery.

The Protector’s industry-leading ENERGY STAR® ratings exceed federal standards for energy efficiency; the gas Protector earned a rating of 56.4 percent, near the top of its class among gas fryers, while the electric Protector’s 85.6 percent rating surpassed all other electric fryers.. Both the gas and electric models also simplify and automate typical fryer maintenance tasks, such as oil replenishment and refilling, which offers labor savings and protects workers.
The Protector fryer is racking up industry awards for its innovations. It earned a coveted 2008 Kitchen Innovations™ (KI) award from the National Restaurant Association earlier this year. The Electric Foodservice Council awarded the Protector its “Innovation of the Year” award in November 2007, Most recently, the gas Protector was awarded the Gas Foodservice Equipment Network’s (GFEN) Blue Flame award for foodservice product of the year.
